First is that it requires the use of additives like digestion enzymes and preservatives, these are still left over in the finished product and are very bad for your gut. Imagine adding a dishwasher pod to a casserole - you might not directly taste it, but would you want to eat it?
Secondly it doesn't digest the natural sugars as much because the process has to be so fast. This means it tastes like cake and contributes to shit like diabetes and obesity.
Third is the inability for the gluten inside to be broken down like it would in a normal bread making process. The chorleywood process has been linked directly to the massive proliferation of things like IBD and gluten intolerance. That's not even bro science or whatever that's very uncontroversial well established fact from research.
It's just shitter in literally every single way, unless your main goal is the mass production of shit, disgusting, low quality and unhealthy feed stock for your tax chattel.
