For the record I am not pro-immigration. Unrestricted immigration is a largely Liberal(in the classical sense) policy that serves to do exactly as you say. But the immigrants coming to the United States are empirically not depressing wages. These are people that live within our society, that pay taxes, that shop at our businesses, and for all intents and purposes are hardworking Americans that stimulate the economy. What depresses wages is the offshoring. There is zero economic benefit to offshoring jobs, even if they "lower prices" IT IS NOT WORTH IT if those prices are unsustainable and only encourage people to consoom endlessly at the expense of their neighbor.

Real answer? Because it's seasonal work and it's easier to hire migrant workers for 1 season than go through the process of hiring Americans that (generally) want long term employment. These people are also farmers by trade, therefore they understand the intricacies of farming and don't need on the job training the way most Americans do. America grew all of its food locally and using American hands in the 1930's and 1940's, but that was also when we had a LOT more agricultural workers. Farming is an increasingly unpopular job, and these people are just filling a vacuum that would otherwise go unfilled. This is an interesting topic because it kinda just highlights the flaws of Republican Democracy. The parties swinging back and forth every few years means nothing long-term ever gets done. Politicians will reach for the short-term headlines that win them elections instead of accomplishing long-term plans like building housing that could take 10+ years. Look at China. The kind of wagies stuck in food service/retail hell or living by the skin of their teeth in the gig economy could get a stable, good income with benefits. People who aren't interested in college would have another viable career path.

I would not be better off working in a factory because I already have a stable, good income with benefits doing something else. I grew up when manufacturing careers were not viable in this country, so I responded accordingly and pursued another unrelated field where I built a respectable career. If that dynamic changed future generations would grow up knowing they could work in manufacturing instead of having zero interest in manufacturing because boomers and Jews sold all our factories overseas. My personal situation doesn't change the fact a huge amount of Americans would be better off if they could work in manufacturing.
